salaam alai kum janab... The vertical height of the dish is the main size of the dish, you can measure it with a measuring tape or any scale which is convenient to you. Actually most of the dish that i have observed is always greater than 60cm say approx 65 cms, and my 90 cm dish is actually approx 100cms when i measured it... (i mean the vertical height).
The width depends from dish to dish, my 90cm dish is having a width of 74cms....

The dish depth need to be included while measuring the dish vertical length.....
